[00:00:00] Speaker A: Welcome to Edna Mode. So here we have up to 16 flavors of ice creams, sorbets, and plant based ice creams.
[00:00:19] Speaker B: Okay, Chef, we're here in Edna's a la mode suites.
[00:00:23] Speaker A: Yes.
[00:00:24] Speaker B: And we are so excited to be here. We're excited to see some of her wonderful confectionaries. Or your wonderful confectionaries, let's be honest.
[00:00:32] Speaker A: Well, I do the.
I do the inspiration, but I'm very fortunate. We have very talented pastry chefs who executes it all and to keep maintaining it. That's definitely.
It's not just me, it's the whole team that does everything. That's for sure.
[00:00:47] Speaker B: Wonderful. Will you show us some of your favorites in the case?
[00:00:50] Speaker A: Of course. Let's start from the ice cream on. Sure. Let's go from there.
[00:00:54] Speaker B: Absolutely.
[00:00:55] Speaker A: Welcome to Edna Mode. So here we have up to 16 flavors of ice creams, sorbets, and, and plant based by strings.
And then over here we have up to 20 flavors of gelatos. We stick to, you know, we have different, you know, obviously we're catering for all of our guests. You know, we have some classics. You know, your pistachio gelato, your, you know, your hazelnut cookies and cream. But then, you know, with the kids, you know that, you know, you have candy explosion. You have the unicorn tooth marble gelato. Obviously themed with the marble.
We do, you know, frozone men. Now, he has a lemon blueberry gelato.
So we make all our gelatos on board. Obviously, our machines are there. We have two pastry chefs that I think I did say that, but I'll say again, two pastry chefs on board.
One of our pastries is upstairs. This is one even right there.
They turned the gelatos, they set up the shop, making sure that, you know, decorations and everything else. Then downstairs, another pastry ship, and they do all the production and everything else.
[00:02:04] Speaker B: Amazing.
[00:02:05] Speaker A: We have up to 32 pastry chefs and bakers on board.
[00:02:08] Speaker B: On board. Wow. We make a lot of desserts.
[00:02:10] Speaker A: Yes. And bread.
[00:02:11] Speaker B: Oh, yes, yes.
[00:02:12] Speaker A: We make up to 20,000 items a day, from bread to desserts, every day.
And of course, I mean, you have 4000 guests, but you have 1800 cremendas.
[00:02:23] Speaker B: Right.
[00:02:23] Speaker A: So. So a lot of feeding.
[00:02:26] Speaker B: Right. What's your favorite dessert to eat?
Not to make, but to eat. Your absolute favorite?
[00:02:34] Speaker A: That's a good question. I like anything citrus.
[00:02:36] Speaker B: Oh, yeah, okay.
[00:02:38] Speaker A: Obviously. Well, from. From ice cream. I love hoofs and cream ice cream.
[00:02:42] Speaker B: My favorite as well.
[00:02:45] Speaker A: I love anything citrus, like a citrus cheesecake or orange almond cake. I love.
But I'm an Aussie from Australia. I love fruitcake. That's my favorite.
So I'm very happy. Christmas is coming. Yes.
[00:03:02] Speaker B: And big fruitcake time.
[00:03:03] Speaker A: You can edit this bit.
Public's had fruitcake, and I bought it last week.
I'm not home for another couple of weeks, but it's there for Christmas.
[00:03:13] Speaker B: Yeah.
[00:03:14] Speaker A: I love fruitcake.
[00:03:15] Speaker B: You love fruitcake. I love that.
That's fantastic.
[00:03:18] Speaker A: So over here, obviously, part of our.
Part of the theming of our shop, we always got to have gelato y a Sunday. And, you know, this is a num num race car. And so our guest has up to three flavors of ice cream, gelato of their choice, and we have to up to five flavors of toppings.
[00:03:41] Speaker B: Wow.
[00:03:42] Speaker A: We have 40 flavors of toppings, as you can see there, but chocolate sauce, caramel sauce, and whipped cream.
But this is here as a sample of what would look like is.
[00:03:52] Speaker B: So it's three scoops.
[00:03:53] Speaker A: That's three scoops or whatever.
[00:03:55] Speaker B: Whatever you want.
[00:03:56] Speaker A: And then five different flavors of toppings. And then whipped cream.
[00:04:00] Speaker B: Oh, my goodness.
[00:04:01] Speaker A: Of course. A cherry on top.
[00:04:02] Speaker B: Yes, of course.
And the confectionaries we're headed to. So cookies and cupcakes and all kinds of delicious things.
What's the most challenging one to create here?
[00:04:15] Speaker A: Yeah, that's a good question. Easy one was num num cookies.
[00:04:19] Speaker B: Yeah.
[00:04:20] Speaker A: And obviously, you can't just num num cookies. And that's it.
[00:04:23] Speaker B: Right. You can't just serve a cookie and say, call it a num num cookie. It has to be a num num cookie.
[00:04:29] Speaker A: So obviously, you know, I had to watch the movie a couple of times and try and think of, okay, what else is food now? Mr. Incredibles, you know, love chocolate cake and part of the snip of the movie. So obviously, we're doing a. A chocolate double chocolate cupcake. But obviously, you know, you got to think of Edna. You're thinking, oh, her layer. You're thinking of her being fashion, as you can see.
[00:04:51] Speaker B: Yes. Very fashionable.
[00:04:53] Speaker A: Thinking of colors.
So.
So to do that, I bought the colors, the textures into our desserts. So as you see back here on your gelatos, you see a lot of chocolate garnishes, but has different patterns. So different patterns meaning different materials. Like you'd pattern on your clothes and things like that to bring that in. And then obviously, through the case line here, you have cookie. You have cooking cream cookies, which has three layers of cookies with just filling inside. But as you can see, you have different patterns, which is themed to trying to show that that's the material of Edna's clothing.
[00:05:34] Speaker B: Right. Her fashion. Yeah. It has to go hand in hand with the theming. All of your confectionaries. They're honestly so beautiful, chef. I mean, all of these patterns and all of these colors are just so vibrant. I love, I mean, I love the yellow on this cookie here. Yeah. I love this kind of Jackson Pollock look to this green cookie.
[00:05:55] Speaker A: So it's like, you know, sort of. He's angry, but not too angry. I mean, you're starting to bring the colors, right? Yeah, this is true.
[00:06:01] Speaker B: Yeah. And of course, polka dots. You have to have polka dots as well. When you're thinking fashion. It's just all. Yeah, it's really. What. And there's the cookie num nums that you were speaking of. They're quite big. They seem larger than the ones we see at Disney's California Adventure in the parks at Disney.
[00:06:18] Speaker A: With Disney World.
[00:06:19] Speaker B: Disney Cruise Line. Gotta go big, right? Go big or go home.
[00:06:22] Speaker A: Different.
We can't be. We. Yeah, we. Yes.
[00:06:29] Speaker B: Yes.
[00:06:31] Speaker A: We need to be unique. Disney Cruise Line.
[00:06:33] Speaker B: Absolutely.
[00:06:36] Speaker A: So we. Yes, we definitely try to be different.
[00:06:38] Speaker B: Yeah, well, and I love that there's so many things that are different from on the other ships. Of course. We have, you know, you have cupcakes and you have macarons, but their, their decor is very, very different. Yes. The. The only thing I see that I recognize is the Mickey and the mini Captain cookies. Because you have to have them. Right?
[00:06:57] Speaker A: Everyone's. Yeah. I mean, obviously we. Yes, we think most of it. Obviously Fred. Not. But we do try to put some, you know, we are on a cruise ship. We love Captain Mickey, we love Captain Minnie. So we have to have.
[00:07:11] Speaker B: Yes, absolutely.
[00:07:13] Speaker A: And then, you know, over time, like on our other sweet shops. This is a brand new shop, obviously. But we do themes for the Valentine's Day, Easter, Halloween and Christmas shops or have Christmas themes as well.
[00:07:31] Speaker B: Right.
[00:07:32] Speaker A: So when that comes. So something different again.
So we trying to change it up now. Again, I talk to the team, work out what is the big sell, what's not selling. We change it. Because this is a merchandise shop. We're very different to in the restaurants as such.
You know, we, you know, we have to be different to what we soak or we Mike and every else.
[00:07:58] Speaker B: Yeah. Now you mentioned for Christmas, will we see some new items here? I mean, I know this is the inaugural season, so I know sometimes we don't see as much Christmas, maybe one.
[00:08:10] Speaker A: Or two items, but not as much compared to our other Sweet Shop. Because obviously, as you said, this is a new shop we want to focus on. Yeah, we want to showcase it. Not.
[00:08:19] Speaker B: Yes, absolutely.
[00:08:20] Speaker A: We want to. We want. We. We. Yeah, we want to showcase Edna. We want to make sure that our guest sees Edna. But definitely, maybe next month, coming up to Christmas, we'll add one or two items into the Sweet Shop. As you can see, it's a full case loan.
[00:08:39] Speaker B: Yes. Oh, there's so much.
[00:08:41] Speaker A: A lot to choose and such.
[00:08:44] Speaker B: Can I ask you one last question, which is not. Not a food question.
[00:08:48] Speaker A: Fantastic.
[00:08:49] Speaker B: But design wise, this is a fabulous space. I would love to know what your favorite design element in this space. I mean, you. You are a designer. As a chef yourself, especially pastry chefs are designers. So I would love to know what design elements you just love in this space.
[00:09:06] Speaker A: That's a very good question.
[00:09:08] Speaker B: Thank you.
[00:09:11] Speaker A: That's a very good question.
[00:09:13] Speaker B: I puzzled you.
[00:09:15] Speaker A: Cupcakes is always.
I always like doing the cupcakes.
[00:09:18] Speaker B: Yeah.
[00:09:20] Speaker A: Because as you say, we have many sweet shops that. Each sweet shop has different cupcakes. They're different. Different shapes, different. You know, obviously, Disney treasure just came out and it was all about Zootopia.
So in Zootopia, we have square cupcakes. Something completely square. Cubed mousse. Completely different to what you think of a cupcake.
[00:09:42] Speaker B: Absolutely.
[00:09:43] Speaker A: So cupcakes is my favorite thing to develop because that's. Everyone loves cupcakes. And, and. And it's great to design something that is unique, that you cannot get it at Walt Disney World.
[00:10:00] Speaker B: Yeah.
[00:10:01] Speaker A: Or anywhere else.
[00:10:02] Speaker B: Absolutely.
[00:10:03] Speaker A: So cupcakes would be my favorite.
[00:10:05] Speaker B: I love that. I love that.
[00:10:06] Speaker A: To do artwork on your actual.
[00:10:08] Speaker B: Now for eating. Are you team savory or team Sweet?
[00:10:12] Speaker A: I'm a sweet.
You can't be. You can't be a faces chef. You got to be sweet.
[00:10:18] Speaker B: I mean, there are savory bugs.
[00:10:20] Speaker A: You never trust the skinny chick.
[00:10:22] Speaker B: Never trust.
